    There are so many different recipes on the internet for various ways to make tacos. We really enjoy this one because you get to scoop out as much as you like…no portion controls here! And it has all of the fixings that make tacos taste good…all in one casserole dish.

    It doesn’t matter if you are young or old..everyone loves this casserole. Imagine getting all the great fixings in every bite. If we knew about this recipe when we were kids we would have requested it all the time. So go ahead and spoil the family and make this casserole for them today.

    1. I cannot fry eggs or scramble lol, so we bake in the oven, lifesaver! Precook tater tots, bacon in microwave or stove, add eggs and all to your tots bake in oven about 30 mins 350F and add cheese too if you like—–wonderful breakfast!!! You can stir your eggs or not if you like the solid yolk <3!

      2 cloves Garlic, minced

      1 can Black Beans, drained
      1 cup Hot Salsa
      1 cup shredded Reduced Fat Cheddar Cheese

      Directions
      1 Heat oven to 350.
      2 Heat oil in a large skillet. Add the onion and garlic and sautee until soft. Add meat and taco seasoning. Cook, breaking up meat with a spatula, for about 5 minutes. Add beans and salsa. Mix well and continue to cook until salsa thickens.
      3 Line the bottom of a large baking dish with tortilla chips, pressing down on them lightly to break them into bite-sized pieces. Spread the meat and bean mixture over the chips and top with cheese. Add sliced jalepenos or other toppings that you ant to be cooked. Bake for 20 minutes or until cheese is melted and gooey.
      4 Scoop up with additional chips if desired.
