Have you ever made beef and potato enchiladas, because this was the first time we have. Sure we have made beef enchiladas with all the fixings but never with potatoes as well. This recipe calls for 1 cup of russet potatoes chopped into small pieces and we have to say that it moves our taste-buds towards enchiladas (which was great before) up a couple of notches.
Maybe it’s the starchiness of the potatoes that makes these so good, we aren’t sure, but all we know is we have found a fantastic new way to enjoy our enchiladas.
